Torta di Risso
Recipe from the kitchen of Mama
Ingredients
- 1 cup Rice
- 1 cup Milk
- Salt for taste and dough
- 1 cup Swiss Chard
- 1 Med. Onion
- 1 cup Water
- 1-2 cups Cheese
- 4-5 Eggs
- 2 cups Flour
- Oil with water for dough
Directions
- Cook 1 cup rice in 1 cup milk and 1 cup water, salt to taste; cool.
- 1 cup Swiss chard, wasked, chopped fine.
- Fry in margarine, 1 med. Onion, chopped Swiss chard, add herb garlic.
- Cook slowly until almost done.
- Put in bowl, add 2 Tab. Margarine, cool.
- Add 1 to 2 cups grated cheese, 4 or 5 eggs.
- Mix well
- Pour into dough lined pan and bake in 350° oven until golden top.
Dough (water oil combination added in unless an elastic dough is made)
- Mix 2 cups flour, salt, oil with warm water.
- Roll out to fit a little larger then pan.
- Put rice mixture in pan.
- Turn dough on top and around the edge.
