Health & Science Horizons at Santa Clara University is a series of events designed to enrich student, faculty, and community understanding of modern healthcare topics. Boasting dynamic and eminent speakers, the series features interdisciplinary programs aimed at inspiring an intellectual dialogue across campus and in our community. Health & Science Horizons brings out the best of a Jesuit education, reflecting Santa Clara’s institutional commitment to the pursuit of informed ethical discourse.

Health & Science Horizons is presented in partnership with the Gerald and Sally DeNardo Lectureship, the Markkula Center for Applied Ethics, and SCU Presents.

Gerald and Sally DeNardo Lectureship and the President's Speaker Series: “The End of Overeating.” Professor of Pediatrics and Epidemiology and Biostatistics at the University of California San Francisco, Dr. Kessler served as commissioner of the U.S. Food and Drug Administration in the 1990s. He chronicled his battles with the tobacco industry in his book A Question of Intent. In the New York Times best-selling The End of Overeating: Taking Control of the Insatiable American Appetite, Dr. Kessler explains how the food industry has a disastrous impact on the eating habits of millions of Americans. Former dean of the medical schools at Yale and UC San Francisco, he is a graduate of Amherst College, the University of Chicago Law School, and Harvard Medical School.

The Art of Science: Watch our DeNardo Science Research Scholars compete as a team against another student team, each with the assistance of an SCU Dining Services chef. While our contestants may still be honing their cooking skills, they excel in creative enthusiasm and a love for food in general! The mystery ingredient will be revealed at the start of the event and judges will not only score based on presentation, creativity, proper use of the mystery ingredient and taste, but also on the "healthfulness" of the three courses: starter, entrée, dessert.

Ethics at Noon: Hunger, Obesity, and Food Justice: A Framework for Sustainable Food Systems. Christopher Bacon is a Santa Clara University Assistant Professor in the Department of Environmental Studies and Sciences. As an environmental social scientist, Dr. Bacon's interest is in deepening and diversifying a dialogue about interdependent society-nature relationships. Several ongoing collaborations with colleagues contribute to an evolving participatory action research agenda that addresses issues of agricultural and environmental governance, sustainability, and social equity.

 

What's for Dinner? How Marketing Influences our Food Choices

DeNardo Dialogue: A presentation and conversation featuring Dr. Katharine Heintz, media researcher and Santa Clara University Lecturer in Communication. Food and beverage marketing is a multi-billion industry, with the vast majority of messages devoted to promoting products that are high in calories, sugar, fat, and/or sodium. With escalating rates of obesity and Type 2 diabetes among U.S. children and adults, what contribution does marketing make to our food choices? Dr. Heintz will discuss the persuasive appeals used in food marketing directed at audiences of all ages.
