Assistant Director

Carol focuses on programs, projects, and planning for the Center for Food Innovation and Entrepreneurship, collaborating with CFIE director, Erika French-Arnold and executive director, Dr. Greg Baker to serve both undergraduate and graduate students. She helps design and chaperone the Center's immersive study program, focused on global food issues and social justice. She supervises a great team of student staff who assist with on-campus events, field trips, a videocast series, and social media marketing.

Carol completed her Master of Arts degree in Counseling from Santa Clara University. She has BS in Consumer Sciences from Purdue University and an AAS in Advertising and Communications from the Fashion Institute of Technology. She co-teaches BUSN 132 - Contemplative Leadership and Sustainability Program (CLASP) and MGMT 42 - Leading from the Triple Bottom Line. She held many positions with Macy’s, including Buyer, Assistant Buyer, and Sportswear Merchandising Coordinator. She championed the Bag Hunger Campaign for Macy’s (WV) for 4 years and volunteers at Second Helpings, a Hunger Relief and Culinary Job Training Program in Indianapolis, IN. 

She enjoys traveling and is an avid hiker and cyclist.
