Apple and Fig Custard

Ingredients:
- 4 tablespoons butter
- 2 tablespoons brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons lemon zest
- 1 vanilla bean
- 3 eggs
- 2/3 cup whole milk
- 2 tablespoons apple sauce
- 3/4 cup sour cream
- 1/2 cup flour
- 1 teaspoon salt
- 4 large apples
- 6 ounces fresh figs
Directions:
- Preheat oven to 450 degrees F and butter an 8x8 baking dish. Combine granulated sugar and lemon zest in a medium bowl. Scrape in seeds from vanilla bean, then massage zest and vanilla into sugar with your fingers until the mixture is fragrant.
- Beat eggs with a mixer in a large bowl until very frothy (about 1 minute) and gradually mix in milk. Add sugar mixture, sour cream, flour, apple sauce, and 1 teaspoon salt. Blend just until smooth and set aside.
- Wash, peel, and cut apples into 1/2-inch-thick rings. Place 4 tablespoons butter in a large pot over medium heat. Cook until butter turns light brown, stirring frequently. Add apples and 2 tablespoons brown sugar to pot and remove from heat.
- Place apples on a large baking sheet. Roast in oven, tossing halfway through, for 25 minutes. Remove apples from oven and let cool for 3 minutes. Wash and slice figs into thirds. Arrange apples and figs in prepared baking dish, reserving some for the top.
- Reduce oven to 375 degrees F, then pour custard over fruit. Place remaining fruit slices on top of custard, and bake for 30 minutes. Enjoy!
