Avocado Bruschetta

Avocado Bruschetta Recipe - Morgan Billington

Ingredients:

  • 2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar 
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano 
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley 
  • 2 avocados
  • 6 slices of bread, toasted

Directions:

  1. Combine lemon juice, red wine vinegar, garlic, salt, red pepper flakes, oregano and black pepper in a medium bowl. 
  2. Whisk in olive oil, then add in cilantro and parsley. Stir until combined. 
  3. Peel, pit, and cube the avocados. Place bread in the toaster. 
  4. Place cubed avocado in a large bowl. Add about half of the dressing to the avocado and stir gently until coated. 
  5. Spoon avocado mixture onto toast slices. Drizzle the remaining dressing over the toast. Enjoy!
