Portobello Veggie Burgers

Ingredients:
- 3 portobello mushrooms
- 2 cans black beans
- 1 small head broccoli, minced
- 1/2 large red onion
- 3 large eggs, beaten
- 3/4 cup panko breadcrumbs
- 1 tablespoon Montreal Steak Seasoning
- 1 tablespoon Worcestershire sauce
- 2 tablespoons minced garlic
- 3/4 cup grated parmesan cheese
- olive oil, salt and pepper
Directions:
- Rinse and dry mushrooms. Remove gills. Cut into small pieces and sauté with olive oil until mushrooms are tender. Set aside to cool.
- Place 1 cup of black beans in a large bowl and mash. Add broccoli, chopped onion, minced garlic, another cup of black beans, and mushrooms to bowl. Gently mix vegetables together.
- Add Worcestershire and steak seasoning. Mix until coated. Add eggs, parmesan and bread crumbs and mix again until the mixture is combined. Set the large bowl aside.
- Heat 2 tablespoons of olive oil in a pan over medium heat. Once the oil starts to simmer (about 2 minutes), dampen your hands and scoop a 1/2 cup of mixture into your palm. Gently shape the batter into a burger while pressing your hands together. If the burger doesn’t hold its shape, add a tablespoon of bread crumbs.
- Place burger patty in the oil and cook on medium high for 4 minutes on each side. A golden brown crust should have formed on each side. Serve with avocado, hummus or any other toppings of your choosing. Enjoy!
