Brussels Sprouts & Kale Salad

Brussel Sprouts and Kale Salad Recipe - Anna Kanaley

Ingredients:

  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil 
  • 2 tbsp dijon mustard
  • 1 tbsp minced onion
  • 1-2 minced garlic cloves
  • 1/4 tsp salt
  • Pepper to taste
  • 1 bunch of kale
  • 12 oz brussels sprouts
  • 1 cup grated pecorino

Directions:

  1. Prepare the dressing by mixing together lemon juice, olive oil, dijon, onion, garlic, salt and pepper.
  2. Cut the hard end off of the brussels sprouts and chop finely. 
  3. Remove center stem of kale and chop kale finely.
  4. Finely grate the cheese.
  5. Toss the kale and brussels sprout leaves together, add the dressing and cheese, and enjoy!
