Butternut, Black Bean Tacos with Mango Salsa

Ingredients:

  • 1 medium butterunut squash
  • Can 15 oz black beans
  • 2 tbls. olive oil
  • Salt and pepper to taste
  • Tortillas (we used homemade blue corn masa tortillas)

Salsa

  • 1 ripe mango
  • ½ a cup fresh cilantro
  • Juice of 1 lime

Directions:

  1. Preheat oven to 375 F. Using a sturdy knife chop butternut into small cubes. Place on baking sheet and drizzle with olive oil and salt and pepper.
  2. Cook squash in oven until soft and slightly brown (about 25 to 30 minutes)
  3. Rinse black beans and combine with cooked squash.
  4. To make salsa, chop mango into 1/2 inch chunks. Chop cilantro. Add lime juice and cilantro to mango and mix.
  5. Heat tortillas on a cast iron skillet. Assemble tacos by scooping butternut/ black bean mixture onto tortilla and top with salsa.
