Grilled Summer Veggie Kebabs

Summer Veggie Kebabs Recipe - Anna Kanaley

Ingredients:

  • Cucumbers
  • Summer squash
  • Zucchini
  • Sweet peppers
  • Spicy peppers
  • Bell pepper
  • 1 yellow onion
  • 4 cloves of garlic, crushed
  • 1 bunch fresh mint
  • 1 handful fresh oregano leaves
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tbsp fresh lemon juice
  • 8 skewers (bamboo or reusable metal ones)

Directions:

  1. Cut veggies into 1 inch pieces. Mix veggies, 2 tbsp olive oil, garlic, mint, oregano, salt and pepper in a medium bowl. Let marinate for 30 minutes.
  2. While the veggies marinate, begin basting mix by whisking remaining 2 tbsp olive oil and lemon juice in a small bowl to blend.
  3. Assemble skewers with alternating veggies. Sprinkle with salt and pepper.
  4. Prepare barbecue on medium high heat. Grill until veggies are cooked through, turning and basting occasionally with oil-lemon mixture, about 13 minutes.
